These luscious bars are quick and easy to make and will disappear just as quickly!
This recipe makes 20 to share.
Ingredients:
To make the cookie crust I used
- 90 g of rice Chex cereal
- 1/4 cup cocoa
- 1/3 cup stevia
- 1/2 cup melted salted butter
Using a fork to mix together and place in a parchment paper lined pan approximately 9x13 and set aside
Cheesecake Batter
Add to your mixer
- 22 ounces light cream cheese
- 2 tsp vanilla extract
- 1 3/4 cup plain Greek yogurt ( I prefer Skyr it’s thick and loaded with protein)
- 4 eggs
- 1/3 cup stevia
- 5 scoops of cookies and cream protein (I use @dymatize ISO100 Whey Isolate)
Directions:
Preheat oven to 325
Mix well together and pour gently over the crumb base
Bake on medium rack for 40-45 min Once cooked and firm remove and let cool completely before serving
Cut into 20 squares and enjoy
TIP: Place an oven safe dish with water below to help avoid cracking
