Oatmeal Protein Cookies

Oatmeal Protein Cookies

• ½ stick of fruit purée
• 6 scoops of vanilla protein powder
• 3 cups of oatmeal (unflavoured)
• 1 egg white (try Eggsel.com egg whites)
• 4 to 6 tbsp water
• ½ tsp vanilla (optional)
• 3 packets Splenda®

Preheat oven to 350°F and soften the fruit puree but do not melt. Mix in vanilla, egg white, and Splenda®. Add remaining ingredients and mix only enough to stick mixture together. Use ice cream scooper to drop about a tablespoon of rounded dough onto non-stick cookie sheet, about 2 inches apart. Bake for 10 to 12 minutes for chewy or longer for crispy cookies!
