Mexican Pizza
• 7" pocket pita bread (make sure it has a pocket)
• ¼ cup low-fat or fat-free cheddar cheese (for the insert)
• ¼ cup fat-free black bean chili
• 2 oz. chicken breast, shredded
• 1 tsp chili powder
Preheat oven to 350°F. Cut a small opening on the side of the pita bread. Sprinkle inside of pita pocket with cheese and a dash of chili powder. Spread pita with chili, add chicken, and sprinkle with cheese. Bake in oven at 350°F for 10 to 15 minutes or until cheese is melted.
