ZUCCHINI BREAD

Ingredients
2 egg whites
1 egg
1 cup olive oil
3 tsp vanilla extract
1 tsp stevia
2 cups zucchini, shredded
3 cups whole wheat flour
1 tsp salt
1 tsp baking powder
¼ tsp baking soda
1 Tbsp ground cinnamon
Directions
1. In a large bowl, beat together eggs, oil, vanilla, and stevia. Stir in the zucchini.
2. Stir in the flour, salt, baking powder, baking soda, and cinnamon.
3. Transfer into a large loaf pan.
3. Bake 50 minutes at 350°F.
