Massive Meat Loaf with Skinny Roasted Garlic Mash

Meat Loaf
• 4 large egg whites
• 1 clove garlic, crushed
• ½ cup no-sugar-added ketchup
• ½ cup oatmeal
• 1 medium onion, sautéed
• 1 cup salsa
• 1 lb extra-lean ground beef

Preheat the oven to 350°F. Combine all ingredients except ketchup until well-blended. Place in a nonstick baking loaf pan. Cover the top with ketchup. Bake at 350°F for 1 to 1.5 hours.

Potatoes
• 2 cloves garlic, pressed
• ¼ tsp olive oil
• 2–3 large potatoes (Idaho or russet)
• ¼ cup low-sodium vegetable stock

Preheat the oven to 350°F. Place the garlic cloves in an ovenproof dish and drizzle with olive oil. Place the dish, uncovered, in the oven for 15 to 20 minutes until the garlic is golden-brown and soft. Remove from the oven and let cool.

Peel the potatoes and cut them in half. Place them in a pot and cover with cold water. Bring to a boil over high heat and simmer until the potatoes are tender when pricked with a fork–about 30 minutes, depending on the size of the potatoes. Drain. Place in a serving dish.

Squeeze the roasted garlic clove to release each clove of garlic. Add the garlic and the vegetable stock to the potatoes. Mash together using a potato masher or fork until desired consistency is reached.
