Sweet Apple Frittata

• 1 tart apple, thinly sliced
• ½ cup golden raisins
• 1 tbsp walnuts, finely chopped
• 1 tbsp honey
• 1 tsp cinnamon, ground
• ½ tsp nutmeg, grated
• ¼ tsp cloves, ground
• 2 cups fat-free egg substitute or egg whites
• nonstick cooking spray

This spicy-sweet frittata is great for breakfast or brunch. Spray nonstick frying pan with cooking spray. Over medium heat, sauté the apples, raisins, walnuts, honey, cinnamon, nutmeg, and cloves. Transfer to a large bowl. Add the eggs. Wipe out the frying pan, then spray with additional cooking spray, over medium-high heat. Let stand for about 2 minutes. Add half of the egg mixture. Lift and rotate the pan so that the eggs are evenly distributed. As the eggs set around the edges, lift them to allow uncooked portions to flow underneath. Turn the heat to low, cover the pan, and cook until the top is set. Invert onto a serving plate. Cut into wedges. Repeat with remaining egg mixture. Serves 4.
