Oriental Beef Biceps

• 2 tbsp low-sodium soy sauce
• 2 tbsp water
• 1 tsp sesame oil
• 1 tsp fresh garlic
• 1 tsp Dijon mustard
• 1 tsp ginger root, peeled, grated
• 1 lb. flank or round steak, sliced thin across the grain
• 1 medium bell pepper, sliced thinly
• 4 scallions, chopped
• 1 tsp sesame seeds, toasted (optional)
• parsley, chopped (for garnish)

This recipe can be done in the microwave or in a wok or skillet. Blend first six ingredients and place in a 2-quart casserole dish. Add sliced meat and stir to coat. Mix in peppers and scallions. Microwave on high 3 to 4 minutes, stirring once. Remove from oven and check; some pieces may be rarer than others, and your preference will dictate further cooking for another minute or so. Garnish with sesame seeds and chopped parsley. Serve with rice and Oriental vegetables. Serves 4.
