Baked Egg with Roast Beef and Feta Avocado Cups

INGREDIENTS

  • 1 medium avocado
  • 2 eggs
  • 80 g roast beef, cooked
  • 1 small tomato, diced
  • ⅛ cup green onions, minced
  • 15 g feta cheese
  • Salt and pepper

DIRECTIONS

1. Preheat oven to 420 °F.

2. Cut avocado in half and scoop out the center hole a little more. Crack an egg in each avocado, sprinkle with some salt, place in a small baking tray and bake for 25 minutes.

3. Once done, top with roast beef and feta. Bake for another 5 minutes, then add tomatoes and green onions and serve. Makes 1–2 servings.
